Greek Inspired Simple Salad


When time is short and you need something fast and delicious this is my newest go to snack or side. While it doesn't have ALL the ingredients of a traditional greek salad it has enough to achieve the great flavour of one. Bonus: I almost always have cucumbers and tomatoes on hand!

All You Need:

Tomatoes
Cucumbers
Feta cheese
Balsamic dressing - I use Wishbone Balsamic Breeze Spritzers
Salt and/or pepper - optional

This is a perfect and easy to pack lunch, just add chicken to make it a meal. Great as a side with dinner or simply a healthy snack to enjoy while enjoying your fav shows or surfing the net! Pin It

  1. I LOVE Greek salad & have it every day. I make up a bunch in a container and just scoop it out, add a roma tomato & the dressing & it's ready to eat in a minute.
    I cut up 1&1/2 cucumbers, 1 orange or yellow pepper, a couple of thinly sliced red onion slices, add feta cheese (patted dry) and a couple of heaping tablespoons of drained, pitted, sliced Greek olives.
    In another small container, I mix about 2 parts corn oil (olive oil goes funny in the fridge), 1 part red or white wine vinegar, Lowrey's Seasoning Salt, Greek seasoning & a touch of water. That sits in the fridge too.
    When I am ready to have some, I cut up 1 roma tomato (per person), add some of the salad mixture & some dressing & yum! It only takes a couple of minutes to make up, keeps well for 2 or 3 days in the fridge & is SO yummy & fast to put on the table.
